4 apples (cored)
1 cup pumpkin puree
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
¼ cup brown sugar
1 teaspoon vanilla extract (optional)
Pinch of salt
Whipped cream or vanilla ice cream (for serving, optional)

1. Preheat the oven:
Set your oven to 350°F (175°C) and lightly grease a baking dish.
2. Prepare the filling:
In a medium bowl, mix together the pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, vanilla extract, and a pinch of salt until smooth.
3. Stuff the apples:
Spoon the pumpkin filling into the cored apples, pressing down slightly to fill them completely.
