🍎 Pumpkin Pie Stuffed Baked Apples

All the cozy flavors of pumpkin pie — baked right inside sweet, tender apples!

🧁 Ingredients:

4 apples (cored)

1 cup pumpkin puree

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon ground ginger

¼ cup brown sugar

1 teaspoon vanilla extract (optional)

Pinch of salt

Whipped cream or vanilla ice cream (for serving, optional)

👩‍🍳 Instructions:

1. Preheat the oven:
Set your oven to 350°F (175°C) and lightly grease a baking dish.

2. Prepare the filling:
In a medium bowl, mix together the pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, vanilla extract, and a pinch of salt until smooth.

3. Stuff the apples:
Spoon the pumpkin filling into the cored apples, pressing down slightly to fill them completely.

4. Bake:
Arrange the stuffed apples upright in your baking dish.
Pour a small amount of water (about ¼ cup) into the bottom of the dish to keep the apples moist while baking.
Bake for 30–35 minutes, or until the apples are tender but still hold their shape.

5. Serve:
Let cool slightly, then top with whipped cream, a sprinkle of cinnamon, or a scoop of vanilla ice cream.

🍂 Tips:

Use firm apples like Honeycrisp, Fuji, or Granny Smith for best results.

You can add a spoonful of crushed graham crackers or nuts on top before baking for extra texture.

Serve warm for a perfect fall dessert!
