Ingredients
For the Cookies:
1 cup unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
3 cups all-purpose flour
1 tsp baking soda
½ tsp salt
For the Cinnamon-Sugar Filling:
½ cup brown sugar, packed
1 tsp ground cinnamon
1–2 tsp milk or cream (to make a paste)
For the Glaze:
1 cup powdered sugar
1–2 tbsp milk
½ tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. Make the cookie dough:
In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
Beat in eggs and vanilla extract.
In another bowl, whisk together flour, baking soda, and salt.
Gradually mix the dry ingredients into the butter mixture until just combined.
3. Prepare the filling:
In a small bowl, mix brown sugar, cinnamon, and milk/cream to form a thick paste.
4. Assemble the cookies:
Roll cookie dough into small balls and flatten slightly on the baking sheet.
Make a small indentation in the center of each cookie and spoon a little cinnamon-sugar filling into it.
Optionally, you can fold over or cover with another small piece of dough to resemble a mini Pop-Tart.
5. Bake:
Bake for 10–12 minutes, or until edges are lightly golden.
Cool completely on a wire rack.
6. Make the glaze:
Whisk together powdered sugar, milk, and vanilla until smooth.
Drizzle over cooled cookies. Let set before serving.
Tips:
For extra nostalgia, top with colored sprinkles before the glaze sets.
Store in an airtight container at room temperature for up to 5 days.
