4 boneless, skinless chicken breasts (or thighs)
1 tablespoon olive oil
Salt and black pepper, to taste
1 teaspoon garlic powder
1/2 teaspoon paprika
3/4 cup apple cider
2 tablespoons Dijon mustard
2 tablespoons honey
1 tablespoon butter
1 teaspoon cornstarch + 1 teaspoon water (optional, for thicker glaze)

1. Make the Apple Slaw
In a bowl, combine cabbage, carrots, and sliced apple.
Whisk together apple cider vinegar, olive oil, honey, salt, and pepper.
Pour over the slaw and toss to coat.
Refrigerate until ready to serve.
2. Season the Chicken
Pat the chicken dry.
Season both sides with salt, pepper, garlic powder, and paprika.
3. Sear the Chicken
Heat olive oil in a skillet over medium-high heat.
Add chicken and cook 4β5 minutes per side, until golden and cooked through.
Remove chicken and set aside.
4. Make the Apple Cider Glaze
In the same skillet, add apple cider, Dijon mustard, and honey.
Whisk and bring to a simmer.
Cook for 3β5 minutes until slightly reduced.
Stir in butter for a glossy finish.
If you want a thicker glaze, mix cornstarch with water and whisk in.
5. Glaze the Chicken
Return the chicken to the skillet.
Spoon the warm glaze over each piece, coating well.
Simmer for another 2 minutes to absorb flavor.
6. Serve
Plate the chicken with a generous scoop of apple slaw.
